So….. It’s been awhile hasn’t it? Things have been so busy here that I had to prioritize what needed my attention the most and unfortunately this fell to the wayside. Never fear, I’m back now and back with a bang!
So I decided that I wanted to try something new. As you know, I tend to cook with the things I have on
hand and not go out and buy things, so I decided to use the items already in the refrigerator. After a recent trip to Target, I got some diced sweet potatoes on sale and took it as a sign for me to try something new, since I’m not that big of a fan of sweet potatoes. I added the chipotle peppers because I LOVE peppers, and the spicier the better. Depending on your taste buds and tolerance for peppers, I would advice you to add as needed or not add at all if you can’t handle it!
Diced Sweet Potatoes with Onions, Minced Garlic, and Chipotle Peppers in Adobo Sauce
16oz. Bag of diced sweet potatoes
1 medium onion
6oz. chipotle peppers in adobo sauce (peppers come in a 12oz can, so I used half of the can)
2 Tbsp minced garlic
Extra Virgin olive oil
Pinch of salt and pepper
Rinse sweet potatoes and bolt dry using paper towels.
Diced onions, garlic, and chipotle peppers (you can also use garlic that are already minced)
Coat pan with extra virgin olive oil. Place diced sweet potatoes in pan and coat with the olive oil. Add a pinch of salt and pepper.
Place the onion, garlic, and chipotle mixture on top and spread it so the sweet potatoes are covered.
Cover with foil and bake at 375 degrees for 1 hour. Let it cool down for 5-10 minutes and it’s ready to be served!
