Any time I think about Cilantro Lime Rice, it’s always associated with Chipotle. It is an unwritten rule every time I go there to get it in my rice bowl or burrito. I mean, I coy isn’t even imagine it any other way. I decide to make my
own version, because why wait right? If I could make it at home, it would be WAY better than what they make over there. Check out this recipe and let me know what you think!
Cilantro Lime Rice
Place parboiled rice in a bowl and rinse with hot water.
Put the rice in the rice cooker and add the recommended water.
Add 1 tablespoon of sunflower and avacado oil, the zest of half a lime, and add salt.
Allow the rice to cook for the recommended time.
While the rice is cooking, chopped cilantro and place to the side.
In a bowl (large enough to hold the cooked rice), mix together the garlic, the remaining sunflower and avacado oil and lime juice.
Once the rice is cooked, add cilantro to the bowl and mix togther.
Add the rice to the bowl and mix everything together.
