Chicken Rice Bowl

Rice Bowls are a easy and healthy go-to lunch or dinner. For many years, when eating at Chipotle or Moe’s, I’ve always wavered between the burrito or the rice bowl. It’s always a 50% chance whether I’d get the burrito or rice bowl. Since I was craving a rice bowl and didn’t want to spend any money, I

decided to make a rice bowl  that requires ingredients already on hand. Obviously rice is involved, but for the protein, you could use beef, chicken, tofu, shrimp, lobster, and on, and on, and on.

For the recipe, I decided to use chicken. I obviously used my baked chicken recipe and this cilantro lime rice recipe that I recently made. Of course buying a rotisserie chicken, or any pre-cooked protein, and using one minute rice would cut you cooking time down significantly as well.  Check out my recipe and see how easy it is to make.

Instructions
  1. Slice bell peppers, chicken, and cherry tomatoes and set to the side.
  2. Place cilantro lime rice in a bowl or the bottom of whichever container you are using.
  3. Place the remaining ingredients (except the sour cream) on top of the rice in any order.
  4. Add sour cream on top and enjoy!
Recipe Notes
