Chicken Lettuce Wraps

Hi! So I want to talk about leftovers. I LOVE leftovers. Coming from a big family, it’s hard to cook small portions of food when all I’ve known is cooking for five or more people. Because of this, I’ve mastered the art of

repurposing food from its intended purpose to make a completely different dish (breaking out my big words here!). I recently made some rice bowls or as some people call them ‘burrito bowls.’ I had some left over chicken, rice, and lettuce, so I decided to make Lettuce Wraps.

This is an easy recipe that will literally take you less than 10 minutes to make because, hello, leftovers! If you don’t have any rice or chicken already made, you can pop to the store right quick for some rotisserie chicken and  Uncle Ben’s Instant Rice.

Instructions
  1. Cook rice as you would normally cook plain rice. Set aside 2 cups of cooked rice.
  2. Chop or shred chicken and set aside 2 cups of chicken.
  3. Dice sweet peppers. Heat oil and saute peppers for 1 to 2 minutes.
  4. Season peppers with salt, onion powder, and ground cumin to taste.
  5. To assembly lettuce wraps, place lettuce on a plate and add the rice as the bottom layer (make sure you don't add too much or the lettuce will tear when you pick it up).
  6. Place chicken on top of the rice and the sauteed sweet peppers on top of the chicken.
  7. Sprinkling sriracha hot chili sauce on top and enjoy!
