Lately, I’ve been trying to do the whole meal-prep thing. Some weeks it’s a success and other weeks I’m just like ” Bump it!” This past week I decided to use chicken for that week’s meal-prep. Only one problem….
I didn’t have any ingredients to use other than spices. Fortunately I spied some jalapenos I purchased earlier in the week. I did some research and saw some recipes using jalapenos and decided to try to do my own version. This is something different for me, so I hope you like it!
Honey Garlic Jalapeno Chicken with Lime Juice
- 10 Chicken drumsticks
- 8-10 Jalapeno Peppers cut in halves or thirds (with or without seeds)
- 1/2 cup Agave Honey
- 2 Limes squeezed
- 1 tbsp Garlic minced
- 1 Onion chopped
- Salt and Pepper as needed
Rinse and dry chicken drumsticks. Set aside.
In a food processor, place jalapenos, garlic, agave honey, lime juice, and onion and blend.
Mixture does not have to be smooth, so blend to your preference (chunky or smooth).
In a container, place drumsticks then pour jalapeno mixture on top.
Cover container and place in refrigerator for 2 hours.
Preheat oven to 425 degrees.
Take chicken out of the refrigerator and place drumsticks in a baking pan. Sprinkle with salt and pepper as desired.
Using a perforated spoon, scoop jalapeno mixture and place on top of the drumsticks. Leave liquid in the bowl.
Cover the baking pan with aluminum foil and place in the oven.
Bake for 30 to 45 minutes, or until cooked to your desired preference.
